
Darling’s Chicken Enchiladas
Ingredients
- 10 or 12 corn tortillas
- 2 tsp chicken bouillon
- ¼ C sliced green onions
- 2 chicken breasts, shredded
- 1 can chopped green chilies
- 8 oz cream cheese
- 1 can enchilada sauce
- 2 C mozzarella cheese
Instructions
- Mix together cream cheese, chilies, chicken bouillon and green onions
- Add chicken and stir until combined.
- Cook tortillas on a hot skillet
- Put about ¼ c filling in each tortilla and roll up.
- Spread a small amount of enchilada sauce in the bottom of a 9x13 pan. Place tortilla rolls in the pan. Pour enchilada sauce over the tortillas and bake at 350 degrees for 20 minutes.
- Remove from oven. Top with grated cheese, and return to oven until cheese is melted.
