Darling’s Chicken Enchiladas

  • 10 or 12 corn tortillas 
  • 2 tsp chicken bouillon 
  • ¼ C sliced green onions
  • 2 chicken breasts, shredded
  • 1 can chopped green chilies
  • 8 oz cream cheese
  • 1 can enchilada sauce
  • 2 C mozzarella cheese


  • Mix together cream cheese, chilies, chicken bouillon and green onions
  •  Add chicken and stir until combined.
  • Cook tortillas on a hot skillet
  • Put about ¼ c filling in each tortilla and roll up.
  • Spread a small amount of enchilada sauce in the bottom of a 9x13 pan. Place tortilla rolls in the pan. Pour enchilada sauce over the tortillas and bake at 350 degrees for 20 minutes. 
  • Remove from oven. Top with grated cheese, and return to oven until cheese is melted.
