
Ebelskiver Batter
Ingredients
- 3 large eggs separated
- 1 tsp baking powder
- 2 Tbsp sugar
- 1 tsp baking soda
- ½ tsp salt
- 2 c buttermilk
- 2 c Grandpa's Kitchen Flour Blend
- 2 Tbsp butter melted
Instructions
- Beat egg yolks with sugar and salt. In a separate bowl whisk together the dry ingredients. Add dry ingredients to the yolk mixture alternating with the buttermilk. Beat egg whites until stiff peaks form. Gently fold egg whites into batter with a rubber spatula. Heat Ebelskiver pan over medium heat until hot. Brush with melted butter. Fill each cup 2/3 full of batter. After 3 to 5 minutes turn Ebelskivers using wooden chopsticks or skewers and cook another 2 to 3 minutes until browned on all sides. Serve with jam, roll in cinnamon and sugar, sprinkel with powdered sugar, or brush with glaze.
