Goulash/South of the Border Style

  • 1 lb ground beef or pork
  • 2 c cooked kidney beans
  • 1 chopped red pepper
  • 1 c red quinoa
  • 1 chopped onion
  • 1 c white basmati rice
  • 3 minced garlic cloves
  • 2 Tbsp chili powder
  • 1 c chopped green chilies
  • ½ bunch cilantro chopped
  • 29 oz can crushed tomatoes
  • 3 c water
  • ½ bunch cilantro for garnish
  • Salt and pepper


  • Brown meat with rice and quinoa. Add all remaining ingredients, except cilantro garnish. Place lid on pressure cooker and cook on high for 6 minutes. Let pressure down naturally and open, stir in fresh cilantro and enjoy.
