
Goulash/South of the Border Style
Ingredients
- 1 lb ground beef or pork
- 2 c cooked kidney beans
- 1 chopped red pepper
- 1 c red quinoa
- 1 chopped onion
- 1 c white basmati rice
- 3 minced garlic cloves
- 2 Tbsp chili powder
- 1 c chopped green chilies
- ½ bunch cilantro chopped
- 29 oz can crushed tomatoes
- 3 c water
- ½ bunch cilantro for garnish
- Salt and pepper
Instructions
- Brown meat with rice and quinoa. Add all remaining ingredients, except cilantro garnish. Place lid on pressure cooker and cook on high for 6 minutes. Let pressure down naturally and open, stir in fresh cilantro and enjoy.
