
Grandma Shrock’s Carrot Cake
Ingredients
- 2 ½ C Grandpa's Kitchen Flour Blend
- 2 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- ½ tsp powdered ginger
- ½ tsp salt
- 4 large eggs
- 2 C mayonnaise
- 1 C crushed pineapple
- 3 C grated carrots
- 1 C walnuts
Instructions
- Stir together flour, baking soda, baking powder, cinnamon, ginger, and salt. Set aside. Beat together eggs, sugar, mayonnaise, and pineapple (undrained) or applesauce.
- Gradually beat in flour mixture until well mixed. Stir in carrots and walnuts.
- Pour into greased 9x13 pan.
- Bake at 350 degrees for 45 to 50 minutes. Cool.
Notes
When cool, top with cream cheese frosting or caramel sauce (found under syrups and sauces).
