Grandma Shrock’s Carrot Cake

  • 2 ½  C GK Flour Blend
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp powdered ginger
  • ½ tsp salt
  • 4 large eggs
  • 2 C mayonnaise
  • 1 C crushed pineapple
  • 3 C grated carrots
  • 1 C walnuts


  • Stir together flour, baking soda, baking powder, cinnamon, ginger, and salt. Set aside. Beat together eggs, sugar, mayonnaise, and pineapple (undrained) or applesauce. 
  • Gradually beat in flour mixture until well mixed. Stir in carrots and walnuts.
  • Pour into greased 9x13 pan. 
  • Bake at 350 degrees for 45 to 50 minutes. Cool.


When cool, top with cream cheese frosting or caramel sauce (found under syrups and sauces).
