This pumpkin cake mix is SO good! I can’t get enough of it!

Mmm, mmm, mmm! I sampled this at the GF expo and finally made the mix. I used frozen pumpkin and egg substitute. They turned out light and airy, just like a cupcake should, but often doesn’t once you remove the gluten, dairy, and eggs. They were a bit oily. Maybe I measured incorrectly. Delicious enough that frosting isn’t needed.
