Pull Apart Dinner Rolls

Ingredients

Wet Ingredients:

  • 12 oz plain yogurt
  • 1 tsp vanilla optional
  • 2 eggs slightly beaten
  • ¼ c oil

Dry Ingredients:

  • 1 pkg Grandpa's Kitchen Bread Mix
  • 1 tsp salt
  • ½ c GF Oatmeal Flour
  • 3 tsp baking powder
  • ¼ c Flours of your choice*
  • 3 Tbsp sugar
  • 1 Tbsp yeast

Instructions

  • Preheat oven to 400 degrees.
  • Put oatmeal flour and extra flours in a large measuring bowl, add enough Grandpa’s Kitchen bread mix to equal 2 cups plus 2 Tbsp. Mix flours with other dry ingredients and place in a mixer. Combine wet ingredients, add to the dry ingredients and mix for five minutes, making sure all the dry ingredients are combined. Cover the dough and put in the fridge for about 2 hours to make the dough more manageable.
Grease hands well. Using a 2 inch scoop, make dough balls, rolling gently and placing in a greased 9x9 pan, makes about 9. Let rise for about 30 minutes or until rolls rise until they touch each other. Bake for 20 minutes or until golden brown. You can broil for about two minutes to darken the tops.
*I have used flax, teff, sourghum, quinoa, or brown rice flour. You could also just use more Grandpa’s Kitchen bread mix.
Variations: Gently drop the dough balls in melted butter then roll in parmesan cheese, dried parsley, and garlic pepper. Bake as directed above.

I was disappointed not to find a recipe for just plain white bread using your basic flour blend-either in your cookbook or on your website. Since I was diagnosed with Celiac Disease, I have tried several recipes for white bread, but haven’t found one I really like. I hope you have one you can share. By the way, I have also tried several flour blends, and yours is by far the best. The recipes I have made using your flour come out just like they did before, using regular flour. I just wish you didn’t charge so much for it. Chris Harrison

    1. Chris,
Thank you for contacting us. We are so grateful you love our flour, we think it is the best as well! Regarding a white bread recipe, there have been a few people who have used our flour blend to make bread, but we have found the results to be a little dry and crumbly. Because of this, we developed our Grandpa’s Kitchen Bread Mix, which you can purchase on our website. The bread mix can also be used to make scones, pizza, and cinnamon rolls. It uses the same flours as the flour blend, but has more starches and less rice flour, which produces a moist and delicious white bread. You can also use the bread mix to make our whole grain bread. The whole grain bread recipe can be found on our website.

Please let me know if you have any other questions.
      Thank you,
      Allyson

Is the Kitchen Bread Mix different than the baking flour blend?

    1. Yes it is. They both have the same flours but in different quantities. The flour blend is great for cakes, cookies, pancakes, etc. The bread mix is used for the bread, pizza crust, scones, dinner rolls, etc. The flour blend would produce a really dry bread.
