Danish Rolls

Prep Time 25 minutes

Ingredients
  

  • 1 ½ Grandpa's Kitchen Flour Blend
  • 1 c lukewarm water
  • 1 ½ tsp baking powder
  • ½ tsp vinegar
  • 2 ½ tsp sugar
  • 1 tsp sugar
  • ½ tsp salt
  • 1 Tbsp yeast
  • 3 Tbsp butter melted
  • ¾ c jam any flavor
  • 2 eggs room temperature

Instructions
 

  • Add yeast and t tsp sugar to lukewarm water, set aside. In medium mixing bowl combine dry ingredients. To yeast mixture add eggs, 2 ½ Tbsp sugar, cooled melted margarine and vinegar. With electric hand mixer, beat on low until blended. Add half of flour mixture and beat on low until well blended. With spoon, stir in remaining flour mixture and beat until smooth.
  • Drop 6 to 8 rounds of dough on large greased cookie sheet – dough will be sticky. Place 1 Tbsp of jam in the center of each round. Let rise until double – about 20 minutes.
  • Bake at 350 degrees for 7 to 9 minutes or until lightly brown. Ice and serve while still warm. Best if eaten with two days of making them.

Notes

ORANGE ROLLS: Add orange zest and a little concentrated orange juice to mixture before baking. Top with an orange glaze.
CINNAMON ROLLS: In large muffin pan, layer a spoonful of dough and a sprinkle of cinnamon and sugar mixture, repeat until the muffin cup is full. Let rise about 20 minutes or until the dough reaches the top of the pan.
SANDWICH OR HAMBURGER BUNS: Spread dough out on a greased cookie sheet or in the cups of a Whoopie pan. Let rise for about 20 minutes then bake at 350° for 10 – 20 minutes or until lightly browned. This roll can also be folded over for a hotdog bun.
